  1. Mix sooji and besan with 1 cup curd - add salt, red chilli powder, sugar, lemon juice - add water to get required consistencyand let it rest for an hour.
  2. Make the puree of boiled beetroot - make the puree of blanched spinach - divide the batter into 3 portions - in 1st one add turmeric powder - in 2nd add beetroot puree - in 3rd one add spinach puree.
  3. Put steamer on boil - grease idli dishes - add eno in mixture in all the three bowls and put the batter in dishes (put 1 tspn of yellow batter, then add green batter and then red one)...give a slight tap - steam for 15 min.
  4. Let it cool and then scrape them out - cut them in half.
  5. Put oil in a pan and add mustard seeds, curry leaves, slited green chilli - add idlis and mix with soft hands.
